Sausage + Veggie Sheet Pan Dinner
Sheet pan meals are one of my favorite simple family dinners. One pan to cook. One pan to clean. Win-Win! Actually I always have two pans in the oven. One pan for dinner, and the other pan for easy meal prep during the week.
You can get creative with your sheet pan dinner, or keep it simple. In our household, there is a bit of protein, surrounded by a whole lot of vegetables. This particular sheet pan dinner combines the kids favorite sausage with lots of roasted veggies, placed on top of a base of quinoa. Leftovers are used atop salads for lunch, gluten-free noodles for the kids school lunches or, just as a yummy breakfast bowl.
Not only does everything roast on one sheet pan, they all share their flavors with each other and produce a super flavorful family dinner. The kids love Organic Chicken Apple Sausage. Pre-cooked sausage gets sliced up and tossed together with a load of healthy vegetables. Spray it with your oil of choice, sprinkle salt and pepper, and let it all work its magic together in the oven. While it roasts, you have time to play a board game with the kids, lounge with a glass of wine or, simply stare out the window.
Once it’s ready, you can enjoy it simply served up in a bowl, or include your family’s favorite healthy buddha bowl base {quinoa, brown rice, fresh greens, etc}. Stop there, or add even more flavor with a drizzle of yummy sauce. My son and I live for the opportunity to top anything with nutritional yeast. We call it magic dust! I will forever believe in magic, in any form. And this easy family sheet pan dinner is pure magic. It’s simple and quick, and yet feels thoughtful and fulfilling.
Best Instant Pot Mashed Potatoes
Ingredients
- 3 lbs russet potatoes peeled & cut into large chunks
- 3 cloves garlic peeled and smashed
- 2 tsp salt
- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 5 cups water, or just enough to cover potatoes
- 6 tbsp vegan butter, or regular butter
- 1 cup Oatly, or cow milk/cream of choice
- 2 teaspoon salt or to taste
Instructions
- Place large chunks of potatoes, smashed garlic, salt, and fresh herb sprigs into the stainless steel Instaspot insert. Add just enough water to cover the contents.
- Cover with the lid, confirming the sealing valve is closed. Press "Pressure Cook" and set time for 10 minutes. Remember it takes time for the Instapot to build pressure before it starts the ten minute countdown.
- Once you hear the beep, slowly release the pressure by turning the top valve. Remove lid, and carefully drain away the water. You may remove the herb sprigs now.
- Add the butter and begin to mash the potatoes. Once the butter has fully melted, add in the milk of your choice and continue to mash until you've reached your desired consistency. More milk may be added to potato mash if you would like to reach an even creamier texture. Taste and add salt to finish them off.
- If you aren't quite ready to eat yet, press the "Keep Warm" button. When you are ready to serve the best mashed potatoes ever, you can leave them in the warm pot, or scoop them out into a serving bowl.
- Store leftovers in Reusable Silicone Storage BagThisIsALink0s. You can keep them in the fridge or freeze them to enjoy later in the month.
